Steps to make Vegane Tortilla:
Die Kartoffeln schälen, würfeln und in Salzwasser für 10-15 Minuten bissfest kochen.
Währenddessen die Schalotten fein schneiden und in der Pfanne mit etwas Öl glasig dünsten.
Den Teig aus Kichererbsenmehl, Wasser, Paprikapulver, Backpulver, Salz, Kala Namak und Kurkuma anrühren. Kartoffeln abseihen und zusammen mit den Schalotten zum Teig geben und unterheben.
In der Pfanne erneut einen Teil des Olivenöls erhitzen, den Teig in die Pfanne geben und unter geschlossenem Deckel den Teig 10-12 Minuten stocken lassen. Danach mithilfe eines Tellers die Tortilla wenden, nochmals Öl in die Pfanne geben und von der anderen Seite ebenfalls 10-12 Minuten goldbraun braten.
