1. Die rote Bete gründlich waschen und samt Blättern und kleinen Bete-Knöllchen klein schneiden. Den Knoblauch fein reiben. Die Möhren schälen und in Würfel schneiden. Dill fein schneiden.
2. Die Möhren, rote Bete (ohne Blätter) und den Knoblauch in der Brühe aufkochen und ca. 10 Minuten köcheln lassen.
3. Ist das Gemüse gar, noch die Blätter hinzufügen, weiter köcheln lassen bis sie in der Suppe zusammenfallen und zum Schluss Dill und Créme fraiche und Zucker hinzufügen noch mit Salz, Pfeffer und dem Essig abschmecken und mit hart gekochten Eiern servieren.
