Steps to make Pilzrisotto:

1. Pilze halbieren und in dünne Scheiben schneiden, Schalotten und Knoblauch kleinschneiden. Knobi und Zwiebeln in etwas Öl ca. 3 min anbraten. Jetzt die Pilze dazu und auch kurz mitanbraten.
2. Dann den Reis hineingeben, gut vermischen und rühren, bis er leicht glasig wird, mit dem Weißwein ablöschen.
3. Soviel Brühe angießen, dass der Reis gut bedeckt ist. Bei niedriger bis mittlerer Temperatur und unter regelmäßigem Rühren einkochen lassen und dann weitere Flüssigkeit dazugeben. Das solange machen, bis der Reis bissfest gar ist und alles eine sämige Konsistenz hat. Währenddessen Petersilie hacken und Parmesan reiben.
4. Kurz vorm Servieren noch die Hälfte des geriebenen Parmesans und ein gutes Stück Butter sowie nach Belieben noch Petersilie dazugeben und schön einrühren. Mit weiterem Parmesan und Petersilie auftischen - Bon appetit!
